Pouilly Fumé
Winemaking
Soil geology : 70% clay and limestone, 30% clay-siliceous ground strewn with flint. Grape : 100% Sauvignon, from old vines (30 to 40 years old) Winemaking : stainless steel bowl for 1 year on fine lees with re-gular stirring, and 1 additional year in bottle before selling.
Tasting Shelf life : 7 to 10 years. Suggestions, pairing : Fish from Loire, sander, pike in butter sau-ce. Ideal with white whine sauce turbot, or better with fillet of sole. Overall qualities : characteristic of Pouilly fumé, fat, rich aromas of flint, vanilla, red berry fruit ripe. This wine is produced only in good years when maturation is optimal.
