Pouilly Fumé
This cuvée is made exclusively with the oldest vines of the Domaine.
Winemaking
Soil geology : 70% clay limestone, 30% clay siliceous with flint.
Grape variety : 100% Sauvignon.
Average age of the vines : 40 to 50 years.
Vinification : made exclusively at optimal ripening. Fermented in thermoregulated stainless steel tanks (16°-18°).
Maturation : on fine lees with regular stirring for one year. The wine is then aged a further year in the bottle before being released.
Tasting
Visual : clear and bright golden yellow.
Nose & mouth : aromatic opulence, gunflint, ripe fruits and honey aromas; on the palate, a very fine balance, richness, power and elegance.
Cellaring potential : 15 to 20 years.
Food pairing : Loire fish (zander, pike in butter sauce), turbot with wine sauce, sole fillet.
Overall qualities : typical of Pouilly Fumé, rich with aromas of gunflint, vanilla, red berries. This cuvee is made only the years when ripening is optimal.
