This cuvée comes from a parcel called Le Champ du Charme, with a specific geological section in its middle.
Pouilly Fumé
Winemaking
Soil geology : 50% clay siliceous in the upper part, 50% Kimmeridgian style clay limestone with marl limestone in the lower part of the parcel.
Grape variety : 100% Sauvignon.
Average age of the vines : approx. 25 years.
Vinification : in thermoregulated stainless steel tanks (16°-18°). About 30% of the volume is aged in oak barrels for 10 months, then blended with the wine from the tanks.
Maturation : either on fine lees (steel tank) or oak barrels.
Tasting
Visual : bright golden yellow.
Nose & mouth : clear and fine nose, aroma of young Sauvignon with vanilla and toasted bread taste.
Cellaring potential : 7 to 10 years.
Food pairing : aperitif, fish (salmon tartar, perch fillet with crayfish sauce), white meat dishes.
Overall qualities : typical of Sauvignon Blanc and its gunflint aromas, sophisticated, enhanced by the tannins in the wood.
