This cuvée comes from a parcel called Les Chailloux which means warm stones.
Pouilly Fumé
Winemaking
Soil geology : clay siliceous with stones, sharp and abrasive flint, clayey subsoil, yellow-orange soil.
Grape variety : 100% Sauvignon.
Average age of the vines : approx. 40 years.
Vinification : in thermoregulated stainless steel tanks (16°- 18°).
Maturation : cold settling, then on fine lees with regular stirring for 3 months.
Tasting
Visual : white brilliant, pale golden yellow.
Nose & mouth : lively nose, mineral and spicy mouth, minty scent.
Cellaring potential : 4 to 5 years.
Food pairing : marine fish, whitebait from the Loire, seafood, white meat dishes (veal, poultry).
Overall qualities : characteristic of Pouilly Fumé with aromas of gunflint (flint), typical from the wines of the slopes of Saint-Andelain.
