Soil geology : 100% clayey-siliceous
Grape : 100% Chasselas, 20 years old vines.
Winemaking : in stainless steel, with temperature control on each tank to control the fermentation. Temperature between 16 to 18 celcius degrees.
Tasting
Visual aspect : shiny, bright
Taste and odor : aroma of the Chassela grapes. Fresh and crispy. Mineral and fond.
Shelf life : 1 to 2 years
Suggestions, pairing : on simple opportunities, for snacks. With kirs.
Overall qualities : frank and refreshing. Soft and lighter than Pouilly Fumé.
