It is the Harmony of the different terroirs of the appellation.
Winemaking
Soil geology : 80% Kimmeridgian and Portlandian limestone terroirs, 20% flinty clay soil.
Grape variety : 100% Sauvignon.
Average age of the vines : approx. 40 years.
Vinification : in thermoregulated stainless steel tanks (16°- 18°).
Maturation : on fine lees with regular stirring.
Tasting
Visual : bright white, pale golden yellow. Nose & mouth: floral, minty nose, spices present in the nose and mouth, flinty taste and typical minerality of our terroirs.
Cellaring potential : 4 to 5 years.
Food pairing : aperitif, white meat dishes, fish, shells, shellfish, cheese.
Overall qualities : the cuvée Harmonie has the characteristic aromas of Pouilly Fumé, with a pronounced gunflint taste and a minerality typical of our soils.
