This cuvée comes from the ancient vineyard of the monks of Saint-Laurent L’Abbaye dating from the 12th century.

Winemaking
Soil geology : 100% Kimmeridgian and Portlandian limestone soils.
Grape variety : 100% Sauvignon.
Average age of the vines : approx. 35 years.
Vinification : in thermoregulated stainless steel tanks (16°- 18°).
Maturation : on fine lees with regular stirring.
Tasting
Visual : bright white, pale yellow.
Nose & mouth : floral nose and mineral notes, mature white-fleshed fruits aromas. Well-structured on the palate and typical minerality of the region’s soils.
Cellaring potential : 4 to 5 years.
Food pairing : aperitif, white meat dishes, fish, shells, shellfish, goat cheese.
Overall qualities : a full, firm, fruity wine whose aromas develop more slowly than in other terroirs.
