Winemaking
Soil geology : vintage from the plot called « le champ du CHAR-ME ». 50% clay-silica on top, 50% clay and limestone on the soil, and marly limestone in the lower plot.
Average age of the vines : 10 years
Grape : 100% Sauvignon
Winemaking : in stainless steel vats with temperature control for each tank (16 to 18 celcius degrees). 10% of the volume is rai-sed in oak for 5 months, then blended with wine from the tanks for bottling.
 

Tasting
Visual aspect : slightly darker, shiny gold
Taste and odor : very discreet, young aroma of Sauvignon, with a taste of vanilla and toast.
Suggestions, pairing : appetizers, cocktails, with some fish, sal-mon tartare, salmon with mousseline sauce, trout ravioli with mussels and Pouilly fumé sauce, perch fillet with sauvignon crayfish.
Overall qualities : characteristic of Sauvignon, flinty, very dis-creet with wooden tannins.
