Winemaking
Soil geology : clay-ground, strewn with siliceous pebbles, very sharp flints, abrasives. Clay subsoil, yellow-orange ground. From the land cal-led « les Chailloux » meaning hot stones.
Grape : 100% Sauvignon
Winemaking : In stainless steel tanks with temperature control during fermentation. Between 16 to 18 celsius degrees.
Tasting
Visual aspect : Bright white, slightly golden yellow
Taste and odor : sharper nose, even wild game (sometimes vixen). Mouth more mineral, spicy and very fine. Minty smell.
Shelf life : 4 to 5 years.
Suggestions, pairing :
- marine fishes : grilled sea bass, grilled lobster, grilled sole, small fry from Loire.
- white meat : veal, poultry
Overall qualities : characteristic of Pouilly Fumé with a flint taste. Typical of the St-Adelain hillside wines.
